Buttercream Ruffle Cake Tutorial

Ruffle cakes are the new darlings of the cake world, and rightfully so. They are dramatic and sweet, yet relatively fast and easy, and they allow for a merciful margin of error in the icing process. Makes one 8-inch (20 cm) layer cake.

What You Need:
• 8-inch (20 cm) layer cake, sliced, filled and crumb-coated (We love this Chocolate Lovers Dream Cake recipe)
• 5 cups (1.25 L) pale green buttercream icing (Buttercream icing recipe – you’ll need to make 4 batches for this design. Colour two batches pale green, one batch light green and one batch medium green. Omit the cocoa in the last step)
• 2-1/2 cups (625 mL) light green buttercream icing
•  2-1/2 cups (625 mL) medium green buttercream icing
• Turntable
• Presentation surface
• 3 pastry bags
• 3 couplers
• #104 rose tip
