Directions:

  • In a large Dutch oven, heat 1 tablespoon vegetable oil over medium-high heat. Sauté 1 large coarsely chopped white onion, 1 tablespoon minced garlic and 2 peppers cut into ½-inch-long strips until softened, about 5 minutes.
  • Add to pot 1 tablespoon chili powder, 1 teaspoon chipotle chili powder or chipotle hot sauce, 1 teaspoon brown sugar, 1 can (798 mL) diced tomatoes and 1 can (540 mL) drained and rinsed cannellini or other white beans. Increase temperature to bring to a gentle boil then reduce temperature to low.
  • Add 30 turkey meatballs (homemade or prepared, fresh or frozen) and adjust temperature if required to keep chili at a gently bubbling simmer. Simmer for 30 minutes to 1 hour. Add a small amount of water if chili becomes too thick. Stir in 3 finely chopped green onions and pack in a thermal food container to keep warm until ready to serve (or serve immediately). Makes 10 servings.
