Delicious, savoury Turkey Meatball Chili is an easy and healthy twist on a kid-friendly, classic belly-warming meal. This simple recipe may just become your new family favourite.
- In a large Dutch oven, heat 1 tablespoon vegetable oil over medium-high heat. Sauté 1 large coarsely chopped white onion, 1 tablespoon minced garlic and 2 peppers cut into ½-inch-long strips until softened, about 5 minutes.
- Add to pot 1 tablespoon chili powder, 1 teaspoon chipotle chili powder or chipotle hot sauce, 1 teaspoon brown sugar, 1 can (798 mL) diced tomatoes and 1 can (540 mL) drained and rinsed cannellini or other white beans. Increase temperature to bring to a gentle boil then reduce temperature to low.
- Add 30 turkey meatballs (homemade or prepared, fresh or frozen) and adjust temperature if required to keep chili at a gently bubbling simmer. Simmer for 30 minutes to 1 hour. Add a small amount of water if chili becomes too thick. Stir in 3 finely chopped green onions and pack in a thermal food container to keep warm until ready to serve (or serve immediately). Makes 10 servings.

Preheat oven to 375°F. Line a baking sheet with parchment paper or greased foil. In a large bowl, combine 1 small grated onion, ½ cup finely chopped parsley, ½ cup grated Parmesan cheese, ½ cup panko bread crumbs, 1 large egg, 2 tablespoons thick barbecue sauce, 1 tablespoon minced garlic and ½ teaspoon freshly ground pepper. Add 1 pound ground turkey and, using your hands, gently but thoroughly combine all ingredients. Shape the meat mixture into meatballs 1 inch in diameter and place on baking sheet. Bake for 18 minutes or until firm and golden brown. Makes 30.
