Apple-Cinnamon Squares

What's better than a delicious recipe with apples and cinnamon...? Not much.

The combination of apples and cinnamon is one of the all-time greats. If you like cinnamon, you’ll love this recipe—it’s bursting with it.

  • 1/2 cup (1 s tick) plus 2 tablespoons butter
  • 3/4 cup firmly packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup whole-wheat flour
  • 2/3 cup all-purpose f our
  • 2 tablespoons plus 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 large apple (Rome Beauty, Jonagold, Fuji), peeled, cored, and diced
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup granulated sugar
  1. Preheat the oven to 350 deg. F. Grease and flour an 8-inch square baking dish.

  2. Melt 1/2 cup of the butter in a medium saucepan over low heat. Remove from the heat and stir in the brown sugar. Beat in the eggs, one at a time, and add the vanilla. Stir in the whole-wheat flour. Sift in the all-purpose flour, 1 1/2 teaspoons of the cinnamon, the baking powder, and the baking soda. Stir to combine. Add the diced apple and raisins and mix well. Pour into the prepared baking dish.

  3. In a small bowl, mix together the remaining 2 tablespoons cinnamon and the granulated sugar. Sprinkle over the batter.

  4. Melt the remaining 2 tablespoons butter in a small saucepan over low heat and drizzle over the sugar and cinnamon.

  5. Bake for 30 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool in the pan on a wire rack. When cool, cut into squares.
