Apricot & Ginger Glazed Chicken

Apricot pairs well with ginger, producing a very flavourful glaze. Look for jams with at least 50 per­cent fruit to avoid excess sugar. You can also make this with boneless, skinless chicken thighs.

Prep to table time: 20 minutes
  • 6 small boneless, skinless chicken breasts
  • 3/4 cup apricot jam
  • 1 tbsp finely minced ginger
  1. Preheat oven to 350ºF.

  2. Season chicken with salt and pepper. Mix together jam and ginger; smear a spoonful overtop each chicken breast.

  3. Heat 1 tablespoon canola oil in a large skillet over medium high-heat. When pan is hot, sear chicken in pan, jam-side down. Turn over chicken after 3 minutes; spoon remaining jam mixture overtop each breast, add 2 tablespoons of water and transfer pan to oven.

  4. Bake chicken for 5 minutes, then turn chicken over, spooning pan drippings over chicken. Continue to bake another 5 minutes or until golden and firm to the touch.
