Preheat oven to 350ºF.
Season chicken with salt and pepper. Mix together jam and ginger; smear a spoonful overtop each chicken breast.
Heat 1 tablespoon canola oil in a large skillet over medium high-heat. When pan is hot, sear chicken in pan, jam-side down. Turn over chicken after 3 minutes; spoon remaining jam mixture overtop each breast, add 2 tablespoons of water and transfer pan to oven.
Bake chicken for 5 minutes, then turn chicken over, spooning pan drippings over chicken. Continue to bake another 5 minutes or until golden and firm to the touch.
