Balkan-Style Chicken Stew
This dish brings me back when I was a little girl growing up in Bulgaria. My grandmother was a great cook and this one was my favourite. If you are looking for something quick and simple yet delicious, my version of her chicken stew will definitely satisfy your taste buds. It is our family’s favourite. The stew has a subtle sweet flavour that will make you ask for more!

Ingredients
- 4 medium onions, finely chopped
- 2 medium carrots cut into small chunks
- 1 Cup frozen peas
- 2 Cups leftover chicken cut into cubes
- 2 Cups chicken stock
- 3 tablespoons olive oil
- 1 can (398ml) tomato sauce
- 1 tablespoon paprika
- 1 tablespoon savory
- salt and pepper to taste
- 1parsley to garnish (optional)
Directions
Sauté the onions until soft and translucent.
Add carrots, chicken, chicken stock and tomato sauce.
Add spices, salt and pepper.
Cook for 20 minutes or until carrots are done. Add frozen peas and cook for another 5 to 10 minutes. Enjoy!
