Banana Butterscotch Muffins

It's hard to resist the lure of these muffins. They are incredibly quick, easy to mix up and they travel well too!

Makes 12 muffins
  • 3 very ripe bananas
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup super-fine sugar
  • 1/2 tspbaking soda
  • 1 tsp baking powder
  • 1/2 cup butterscotch chips
  1. Preheat oven to 400-deg. F. Line a standard muffin tin with muffin cups.

  2. Mash bananas and set aside.

  3. Pour oil into a bowl and whisk in eggs.

  4. Put flour, sugar, baking soda and baking powder into a large bowl and mix in egg and oil mixture, followed by the mashed bananas.

  5. Fold in butterscotch chips and place equal quantities in the prepared muffin tin (Tip: Try an ice cream scoop and a spatula!) and bake for 20 minutes.

(1 muffin) 293 calories, 14 g fat, 10 mg calcium, 80 mg sodium, 39 g carbs, 1 g fibre, 4 g protein; excellent source of vitamin B12 and vitamin C; good source of niacin and folate.
