Preheat oven to 400-deg. F. Line a standard muffin tin with muffin cups.
Mash bananas and set aside.
Pour oil into a bowl and whisk in eggs.
Put flour, sugar, baking soda and baking powder into a large bowl and mix in egg and oil mixture, followed by the mashed bananas.
Fold in butterscotch chips and place equal quantities in the prepared muffin tin (Tip: Try an ice cream scoop and a spatula!) and bake for 20 minutes.
(1 muffin) 293 calories, 14 g fat, 10 mg calcium, 80 mg sodium, 39 g carbs, 1 g fibre, 4 g protein; excellent source of vitamin B12 and vitamin C; good source of niacin and folate.
