Banana Chocolate & Pecan Oatmeal Muffins

Pecans and apple-cinnamon oatmeal give a new twist to the old-school banana chocolate chip muffin.

  • 4 very ripe mashed bananas
  • 1/3 Cups brown sugar
  • 1/3 Cups granulated sugar
  • 2 eggs, beaten
  • 1/2 Cups butter, melted
  • 1-1/2 cups all-purpose flour
  • 2 packages quaker oatmeal (apple-cinnamon)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1-1/2 teaspoon salt
  • 1/2 Cups chocolate chips
  • 1/2 Cups pecans, chopped
  1. Preheat oven 350Fº

  2. In a medium bowl add crushed bananas, brown sugar, white sugar, eggs and melted butter. Mix together and set aside.

  3. In another bowl add flour, oatmeal packages, baking powder & soda, cinnamon, salt, chocolate chips and pecans. Mix the dry ingredients together and make a well in the center. Pour banana mixture in and mix together. Do not over-mix.

  4. Line large muffin pan with muffin papers, spoon 3/4 full, put half pecan on the top and place in the oven.

  5. Bake in the oven for 25-35 minutes until muffins are golden.

    Looks like a yummy muffin but I don’t buy instant oatmeal in packets. Not sure how much oatmeal would be in two packets. I am thinking 1/4 to 1/3 of a cup in each. I would add a chopped apple as well.
