Butternut Squash & Apple Mash

To save a whole bunch of time, look for precut fresh butternut squash in the produce section.

Makes 8 servings
Prep Time
Prep to table time: 30 minutes
  • 3 1/2 lb butternut squash, peeled, seeded and cut into 2 1/2-centimetre chunks (or 2 1/2 lb precut)
  • 3 McIntosh apples, peeled, cored and quartered
  • 1/4 cup butter
  • 1/4 cup brown sugar
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp curry powder
  • 1/2 tsp freshly ground nutmeg
  1. Place squash into a steamer insert and steam over boiling water for 15 minutes; add apple quarters and continue to steam for 5 minutes or until both squash and apple are very tender. Drain water and transfer squash and apples to pot.

  2. Add butter, brown sugar, salt, pepper, curry powder and nutmeg to pot with squash and apples. Mash until smooth. If not serving right away, place pot over low heat and cover to keep warm.

Nutrients Per Serving

170 calories, 6 g fat, 77 mg calcium, 343 mg sodium, 30 g carbohydrates, 4 g fibre, 1 g protein. Excellent source of vitamins A and C and potassium; high source of fibre; source of calcium and iron.
