Candy Cane Cookies

What's a better treat over the holidays than candy cane cookies?

Delicious white chocolate butter cookies, studded with tiny chips of candy cane...these are the cookies that our Sugarplum Fairy dreams are made of.

  • 1 cup (140 g) unbleached all-purpose flour
  • ¼ tsp (1 ml) baking soda
  • 1 pinch salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (180 g) lightly packed brown sugar
  • ½ tsp (2.5 ml) vanilla extract
  • 1 egg
  • 4 oz (115 g) white chocolate, coarsely chopped
  • ½ cup (100 g) crushed candy canes
  1. With the rack in the middle position, preheat the oven to 400°F (200°C). Line two baking sheets with parchment paper or silicone mats.

  2. In a bowl, combine the flour, baking soda and salt. Set aside.

  3. In another bowl, cream the butter, brown sugar and vanilla with an electric mixer. Add the egg and beat until smooth. With a wooden spoon, stir in the dry ingredients, chocolate and candy.

  4. With floured hands, shape 3-tbsp (45 ml) dough balls. Place 6 cookies per baking sheet, spacing them evenly.

  5. Bake, one sheet at a time, for about 7 minutes, or until the edges start to turn lightly golden brown (the cookies will still be very soft in the centre). Let cool completely.
