Carrot Ginger Miso Dressing

Ginger adds a zing to this Japanese-style dressing.

Makes 2 cups
  • 1 cup grated carrot
  • 1 tbsp miso paste
  • 1/2 cup rice vinegar
  • 1 tbsp mirin
  • 2 tsp minced fresh ginger
  • 1 cup grapeseed oil
  1. In a blender, combine all ingredients except oil and process on high.

  2. Add oil in a steady stream until well mixed. Refrigerate. Keeps 1 week.
