Heat a large skillet on medium heat. Place the pine nuts in the pan and stir frequently for a few minutes or until fragrant and lightly toasted. Remove the nuts from the pan and set aside in a small bowl.
Use a handheld cheese slicer to slice the carrots into large, flat strips. The strips should be the width of the carrots, approximately 1 to 1½ inches (2.5 to 4 cm). Place the strips in a steamer or saucepan of water, and gently steam or cook for 3 to 4 minutes or until just tender. Remove the strips from the steamer, place in a medium-large serving bowl and toss with the feta cheese, toasted pine nuts and rosemary. Serve.
Dairy-free option :Replace the feta cheese with soy, nut, seed or other dairy-free cheese.
Vegan option: Replace the feta cheese with soy, nut, seed or other vegan cheese.
Raw option: Replace the toasted pine nuts with untoasted, don’t steam the carrots and use raw nut or seed cheese.
TIP: Don’t have a handheld cheese slicer? Use a wide vegetable peeler to slice large, flat strips of carrot.
