Carrots, Curry and Sesame One Pot Pasta

Yes, it's as delicious as it looks! The curry adds some signature spice, but the subtle details in the dish (coconut milk, coriander, sesame oil, etc.) are what make it truly unique.
  • 9 oz whole-wheat spaghetti
  • 1 carrot, grated
  • 8½ fl oz coconut milk
  • 1 small sprig of coriander (cilantro)
  • 1 teaspoon curry powder
  • 1 teaspoon sesame oil
  • ¾ oz golden sesame seeds
  • 2 spring onions (scallions), thinly sliced
  • 1 garlic clove, thinly sliced
  • 1 teaspoon rock salt
  • 25 fl oz water
  1. Set aside a few slices of spring onion and sesame seeds.

  2. Put all the other ingredients into a large saucepan in the order listed.

  3. Cook for approximately 15 minutes over a medium heat, stirring regularly. About 2 cm (¾ in) of cooking liquid should remain at the end.

  4. Sprinkle the remaining sliced spring onions and sesame seeds on top.
