Makes 12 cups of mix
Prep Time
Prep Time: 10 minutes
  • 8 cups all-purpose flour (or a combination of white and whole-wheat)
  • 2 tbsp baking powder
  • 1 tbsp salt
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 2 cups skim-milk powder
  • 2 cups shortening, chilled
  1. Mix flour, baking powder, salt, cream of tartar, baking soda and skim-milk powder in a large bowl. Using a box grater, grate in the cold shortening and mix together. (Alternatively, a large stand mixer works too.) Mixture will have a mealy texture.

  2. Use mix to make Coconut Toffee Bars, Chocolate and Dried Cranberry Scones or Citrus and Pistachio Biscotti.

This recipe doesn’t give the equal amount that is show in the jar. All you have given the recipe for the flour. What gives?

I was confused too but then I clicked on the “Coconut Toffee Bars” link in the second step which took me to the recipe for it and the last step there tells you to layer this flour stuff and the other things like coconut, toffee bits and choco chips in a jar to give you the picture here.

Can you substitute butter for the shortening in the magic baking mix?
