Chicken Cacciatore Stew

Stove top, one pot! Simple, easy and delicious!

This one-pot stew is perfect on its own topped with sour cream or a sprinkle of cheese, or as a topping for pasta or rice.

  • 12 to 16 skinless, boneless chicken thighs
  • 2 tablespoons of olive oil
  • 1 tablespoon chicken spices (paprika, seasoned salt, Montreal chicken spice, etc.)
  • 1 red onion
  • 6 to 8 roma tomatoes
  • 1/2 Cups apple juice
  • 6 sprigs of fresh parsley
  • 1 Cup rotini or fusili pasta
  • freshly grated parmesan cheese
  1. Place olive oil in deep frying pan, and cook chicken, seasoning with your choice of chicken spices.

  2. Chop roma tomatoes and red onion in chunks and add to stew pot.

  3. Add apple juice. Additional juice can be added if desired. Stew for approximate 15 to 20 minutes, or until chicken is cooked.

  4. Add chopped fresh parsley in the last 5 minutes of cooking and simmer.

  5. Cook pasta in separate pot and add to chicken stew.

  6. Sprinkle with Parmesan cheese and serve.
