Place olive oil in deep frying pan, and cook chicken, seasoning with your choice of chicken spices.
Chop roma tomatoes and red onion in chunks and add to stew pot.
Add apple juice. Additional juice can be added if desired. Stew for approximate 15 to 20 minutes, or until chicken is cooked.
Add chopped fresh parsley in the last 5 minutes of cooking and simmer.
Cook pasta in separate pot and add to chicken stew.
Sprinkle with Parmesan cheese and serve.
