Chocolate Cranberry Cookies

These cookies are so simple and so delicious you can whip them up when unexpected guests knock on the door (they'll never know you weren't prepared!).

Chocolate and cranberry is a favourite combination and these cookies are no exception to the rule that the two go together happily.
Makes 18
  • 2 ripe large sized bananas, mashed
  • 2 cups gluten free old fashioned pure oats (large flakes)
  • ¼ cup of sunflower seed butter
  • 1/8 cup coconut oil
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup dried cranberries
  • 1/3 cup unsweetened applesauce
  • ¼ cup of coconut sugar or sucanat
  • 1 Tablespoon of vanilla extract
  • ½ teaspoon sea salt
  1. Preheat oven to 350 degrees F.

  2. Mash bananas very well in a large bowl and add in remaining ingredients.

  3. Allow batter to stand for 20 minutes,then drop by teaspoon full on cookie sheet. I would suggest lining cookie sheet with parchment paper for ease of cookie removal.

  4. Bake for 10-12 minutes.
