Preheat oven to 350 F.
Using an electric mixer, cream butter and sugar together. Add oil and vanilla. Stir in egg and mix well.
Add flour and baking powder and knead lightly into a soft dough. Divide in two and refrigerate half for at least 30 minutes.
Spread remaining half into an ungreased 11" x 8" pan. Spread jam evenly over dough and sprinkle with coconut. Grate refrigerated dough over the top.
Bake for 25 minutes. Dust top with icing sugar while still hot, let cool and cut into squares.
