Crunchy Yogurt and Berries Parfait

Mascarpone is an Italian soft cheese that adds a buttery richness to the parfait.

Prep Time
Prep to Table Time: 10 minutes (not including granola)
  • 2 cups plain yogurt
  • 1 cup mascarpone
  • 3 tbsp honey + extra to drizzle
  • 1 tsp vanilla
  • 3/4 cup granola (recipe here)
  • 1 pint blueberries
  • 1 pint raspberries
  1. Mix together yogurt, mascarpone, honey and vanilla until combined.

  2. Layer yogurt, granola and berries, and a drizzle of honey in tall, narrow parfait glasses. Serve immediately or chill until ready to serve.

Nutrients Per Serving

395 calories, 21 g fat, 188 mg calcium, 85 mg sodium, 44 g carbohydrates, 5 g fibre, 12 g protein. Good source of calcium and magnesium.

    What are the directions? Do you combine the mascarpone with the yogurt and/or the honey? Or are they separate?
