Cynthia’s Mexican Breakfast Burger

Eggs, tomatoes, guac and salsa? Yes please! And the littles will adore having a burger for breakfast...what could be better?

Breakfast burgers are the perfect thing. My family loves burgers and Mexican so this combo with my special bacon guacamole is always a hit!
Ingredients
  • Burgers
  • Whole Grain Ciabatta Buns
  • Red onions
  • Jalapeño Monteray Jack
  • Free range eggs
  • Thick sliced tomatoes
  • Guacamole (recipe below)
  • Pico de Gallo (recipe below)
  • Bacon
Directions
  1. Clean and oil the grill. Preheat to 400F for direct heat cooking.

  2. The burgers will need 6-7 minutes per side.

  3. While the burger grills, go ahead and fry your eggs on a non-stick pan on the stove top. While I do this, I also like to prepare my other toppings, having made my bacon guacamole and pico de gallo ahead of time.

  4. Pile your egg, burger, cheese, guacamole, tomato and onion on a whole grain ciabatta, top with pico de gallo and another bun. Voila!
