Delicious Egg Pizza with Pepperoni and Cheese

Eggzza! Dress up eggs for the kids with all their favourite pizza toppings. For a fibre boost, look for a whole-wheat crust. Make sure there are well-formed crust edges on the pizza shell to keep the eggs from running out!

"I loved that this recipe took less than 20 minutes from the beginning of the preparation to when it was cut into slices and served on our dinner table. It was easy to prepare, used a lot of ingredients I had around the house, and even introduced my family to a few new things that I didn't know they would enjoy!" Anna Albrecht, mom of Sophie, 2, Kingston, Ont.

  • 4 eggs
  • 1 pre-baked pizza shell (400 g size)
  • 1/4 cup Caesar salad dressing (thicker refrigerator style works best)
  • 1 cupgrated mozzarella, divided
  • 12 pepperoni slices
  • 2 bocconcini balls, cut into thin slices (1 1/2 oz.)
  • 2 tbsp chopped fresh basil
  1. Preheat oven to 450°F.

  2. Beat eggs in a small bowl. Season with salt and pepper.

  3. Place pizza shell on an unrimmed sheet pan or pizza wheel. Spread Caesar dressing over pizza base. Sprinkle base with 3/4 cups of mozzarella cheese. Top with pepperoni, bocconcini and basil.

  4. Carefully pour beaten eggs over toppings. Sprinkle remaining cheese over pizza.

  5. Gently slide pizza directly onto rack in oven. Bake 12 minutes or until cheese is melted and bubbly and the eggs are set.

Nutrients Per Serving

Nutrients per serving: 378 calories, 20 g fat, 200 mg calcium, 923 mg sodium, 33 g carbohydrates, 1 g fibre, 17 g protein. Excellent source of vitamin B12; good source of calcium and iron.
