Drizzly Cream Cheese Icing

Sweet with a hint of tartness, this cream cheese icing is wonderful drizzled over Carrot Cake.

Ingredients
  • 1/4 cup low-fat cream cheese, softened
  • 1 tbsp unsalted butter softened
  • 1 cup icing sugar, sifted
  • 1/4 tsp finely grated lime zest
  • 1 tbsp lime juice or pineapple juice
  • To make icing: Cream butter and cream cheese together until smooth. Add icing sugar and blend. Add lime zest and juice and mix well. Drizzle over carrot cake and garnish with toasted coconut.
