Peel and cook in salted water several potatoes, when fully cooked, drain water and return to stove top briefly to remove excess water. Cool and dice into small pieces.
Hard boil eggs, cool, peel and dice into small pieces.
Place cooled and diced potatoes and eggs into bowl, sprinkle with salt and pepper.
Generously mix with mayonnaise. (I prefer Miracle Whip.)
Sprinkle on a bit of paprika.
Sprinkle again with salt and pepper and store covered in the refrigerator until ready to serve.
