Easy Cassoulet

Traditional cassoulet can take a long time to make, but we’ve simplified the steps and ingred­ients without compromising on flavour.

In slow cooker: 8 hours on low or 5 hours on high
  • 6 slices thick bacon, cut into 1-cm pieces
  • 3 large onions, peeled and coarsely chopped
  • 1 tbsp minced garlic
  • 1 tsp dried Italian herbs
  • 3 tbsp tomato paste
  • 1 can diced tomatoes (796 mL)
  • 2 cans white beans (540 mL each), drained and rinsed
  • 6 skinless bone-in chicken drumsticks
  • 6 smoked sausages
  • 2 cups fresh bread crumbs
  • 1/2 cup chopped fresh parsley, divided
  1. In a large fry pan over medium heat, cook bacon until almost crisp. Transfer to the slow cooker. In the same pan, sauté onions until tender, then add garlic and herbs and cook until fragrant, about 6 minutes. Stir in tomato paste, coating onions. Pour in tomatoes to deglaze pan, then transfer vegetables to the slow cooker. Add beans to slow cooker, stirring to distribute. Season chicken drumsticks with salt and pepper; nestle chicken and sausage into the stew. Slow cook on low for 8 hours or on high for 5 hours.

  2. Meanwhile, in a fry pan over medium heat, toast bread crumbs, stirring until golden brown. Remove from heat and mix in 1/4 cup parsley.

  3. Just before serving, stir remaining parsley into stew and sprinkle toasted bread crumbs overtop.

Nutrients Per Serving

632 calories, 21 g fat, 143 mg calcium, 898 mg sodium, 63 g carbohydrates, 11 g fibre, 47 g protein. Very high source of fibre; excellent source of vitamins C and K, niacin, potassium, selenium and zinc; good source of iron; source of vitamin D and omega-6.

  2. No potatoes I think those are the sausages.
