In a large fry pan over medium heat, cook bacon until almost crisp. Transfer to the slow cooker. In the same pan, sauté onions until tender, then add garlic and herbs and cook until fragrant, about 6 minutes. Stir in tomato paste, coating onions. Pour in tomatoes to deglaze pan, then transfer vegetables to the slow cooker. Add beans to slow cooker, stirring to distribute. Season chicken drumsticks with salt and pepper; nestle chicken and sausage into the stew. Slow cook on low for 8 hours or on high for 5 hours.
Meanwhile, in a fry pan over medium heat, toast bread crumbs, stirring until golden brown. Remove from heat and mix in 1/4 cup parsley.
Just before serving, stir remaining parsley into stew and sprinkle toasted bread crumbs overtop.
