Easy Vanilla Cake or Cupcakes

This easy vanilla cake only has 8 ingredients that you can find in your pantry or fridge and only takes about 10 minutes to bake. Milk can be substituted for soy, almond or rice milk for any allergy concerns. For a more tangy flavour to your cupcakes substitute milk for a cup of sour cream. A tangier cake would pair well with a cream cheese or lemon frosting. The recipe can also be used for cupcakes.
12 cupcakes or 1 - 6 inch cake
  • 40g butter, soften
  • 140g sugar
  • 1 egg
  • 120g of flour
  • 7.5g baking powder
  • Pinch of salt
  • 120g milk
  • 1 teaspoon vanilla extract
  1. Combine the butter and sugar ingredients and cream until colour turns pale.

  2. Gradually add eggs one at a time. Scrape the bowl and make sure everything is combined.

  3. Combine the dry ingredients.

  4. Combine the wet ingredients.

  5. Add alternating dry and wet ingredients into the batter.

  6. Bake for 10 to 13 minutes at 325°F.
