Fig, Ham and Cheese Sammies

These sandwiches are a snap to whip up on busy weekday morning or night for an on-the-go dinner.

"Very yummy — not a combination I would have dreamed up, but a new favourite! The figs were a hard sell for my three-year-old, but the rest went over well." Shannon Sterling, mom of Evan, 3, Airdrie, Alta.
  • 4 ciabatta rolls
  • 1 cup soft goat cheese
  • 8 slices ham
  • 1 bunch arugula
  • 4 fresh figs, sliced
  1. Split rolls and spread cheese on each half. Layer each half with 2 ham slices, some arugula and fig. Close and wrap each sandwich individually in plastic wrap.

Per sandwich: 490 calories, 12 g fat, 115 mg calcium, 885 mg sodium, 66 g carbohydrates, 4 g fibre, 28 g protein; good source of folate, magnesium, zinc and iron.
