Flourless Almond Butter Cookies

A melt-in-your-mouth cookie that takes minutes to make? Yes please!

I first made these melt in your mouth almond butter cookies in my teen girls cooking class several years ago. This has now not only become a family favourite with my dad and nieces but my go to quick Christmas recipe.
Makes 18 cookies

  • 1 cup natural crunchy almond butter
  • 1 cup of Sucanat or coconut sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg, lightly beaten
  • ½ teaspoon of sea salt
  • Coarse sea salt, for sprinkling
  1. Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.

  2. In a medium bowl, mix the almond butter, sugar, vanilla, sea salt and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.

  3. Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.
