Grilled Chicken with Tangy Balsamic Tomato Sauce

"I loved this recipe. It was easy to make and delicious. With five kids running around, I need quick and easy meals to make, and this recipe was perfect for that.   • 1 tbsp olive oil
  • 6 skinless, boneless chicken breasts*
  • 3 cloves garlic, chopped
  • 2 tbsp balsamic vinegar
  • 1/3 cup reduced sodium chicken broth
  • 1 cup canned, chopped tomatoes with juice
  1. Heat olive oil in a large sauté pan over medium-high heat.

  2. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and tent with foil to keep warm.

  3. Reduce heat to medium low and add the garlic; sauté about 1 minute. Add the remaining ingredients and stir, scraping the bottom of the pan to remove any browned bits. Cook sauce until slightly thickened, about 3 minutes.

  4. Serve chicken with sauce spooned on top.

Nutrients per serving: 282 calories, 8 g fat, 32 mg calcium, 230 mg sodium, 3 g carbohydrates, 1 g fibre, 47 g protein. Excellent source of niacin; good source of magnesium.
