In a bowl, combine apple, corn, onion and chilis, and mix with lime juice, ouzo and oil. Season with salt and pepper.
Brush each side of cheese with oil. Using a non-stick grill pan or your barbecue, cook cheese 1 minute per side or until golden and softened.
Spoon 1 tablespoon salsa on top and serve.
Nutrients per serving: 259 calories, 27 g fat, 11 g protein, 9 g carbs, 1 g fibre. Excellent source of vitamin C.
