Grilled Haloumi with White Corn & Apple Salsa

The slight saltiness of the haloumi is delicious with the tart apple salsa.

  • 1 cup peeled, cored and finely diced Granny Smith apple
  • 1/2 cup fresh white corn niblets
  • 1/4 cup finely chopped white onion
  • 2 green Thai chilis, seeded and finely sliced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons ouzo
  • 1 tablespoon olive oil plus extra for brushing cheese
  • 12 ounces haloumi cheese, cut into 1/4-inch slices
  1. In a bowl, combine apple, corn, onion and chilis, and mix with lime juice, ouzo and oil. Season with salt and pepper.

  2. Brush each side of cheese with oil. Using a non-stick grill pan or your barbecue, cook cheese 1 minute per side or until golden and softened.

  3. Spoon 1 tablespoon salsa on top and serve.
