Pierce sweet potatoes a few times. Bake in the microwave for about 7 minutes, turning over halfway through. They need to be just firm enough to resist a knife when pierced.
Peel sweet potatoes, cut into ½-inch rounds and then cut each round in half. Toss with oil.
Heat barbecue or grill pan to high. Lightly spray grill with oil and sear potatoes without overcrowding, turning after 3—4 minutes. Return seared potatoes to bowl.
Whisk together buttermilk, mayonnaise, garlic and anchovy paste. Pour over warm potatoes and toss with onions, cheese and bacon. Season with pepper and serve.
