Grilled Sweet Potato Buttermilk Salad

This twist on the traditional potato salad uses the familiar and much-loved taste of Caesar salad with a sweet potato spin.

Tip: Look for rounder sweet potatoes, about half a pound each.
Prep Time
20 Minutes
  • 2 lbs sweet potato (4 medium)
  • 1 tbsp olive oil
  • ¼ cup buttermilk
  • ¼ cup mayonnaise
  • 1 tbsp minced garlic
  • 1 tsp anchovy paste (optional)
  • 3 green onions, thinly sliced
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup chopped crisp bacon
  1. Pierce sweet potatoes a few times. Bake in the microwave for about 7 minutes, turning over halfway through. They need to be just firm enough to resist a knife when pierced.

  2. Peel sweet potatoes, cut into ½-inch rounds and then cut each round in half. Toss with oil.

  3. Heat barbecue or grill pan to high. Lightly spray grill with oil and sear potatoes without overcrowding, turning after 3—4 minutes. Return seared potatoes to bowl.

  4. Whisk together buttermilk, mayonnaise, garlic and anchovy paste. Pour over warm potatoes and toss with onions, cheese and bacon. Season with pepper and serve.
