Kimchi Kick

This bowl starts with brown rice and is packed with fresh veggies, kimchi, chicken & edamame; tossed in a sesame-ginger dressing & topped with spicy mayo.

Keeping a healthy New Year's resolution can be hard! Especially when indulging over the holidays was so easy. Hopscotch (Toronto’s newest health-focused, locally sourced fast-casual restaurant) knows this and has created a menu full of nutritious dishes (like this one below) without sacrificing delicious flavours.

  • 5 Oz - Brown Rice
  • 2 Oz – Bean Sprouts
  • 3 – Cabbage (shredded)
  • 2 Oz – Carrots (Shredded)
  • 2 Oz Cucumber (diced)
  • 1.5 Oz – Edamame peas
  • 1 Oz – Scallion
  • 1 Oz – Radish (julienned)
  • 3.5 Oz of Roasted Chicken or Pork
  • Toppings:
  • Cilantro
  • Nori
  • Sesame Ginger Dressing
  • Gochujang Mayo
  1. Preparation: Cook Brown Rice, shred cabbage, grate Carrots, dice cucumber, de-shell edamame, chop scallion – 1/8” pieces, julienne radish, cube chicken or pork, pick cilantro off stems, cut nori into thin long pieces

  3. Add Brown Rice to bowl

  4. Add bean sprouts, cabbage, carrots, cucumber, edamame, scallions, radish and chicken or pork to bowl

  5. Toss with Sesame- Ginger dressing

  6. Top with cilantro and nori to taste

  7. Slowly drizzle Gochujang Mayo overtop. (100 ml Mayo combined with 25 ml Gochujang.
