Lucha Libre Lunch – A Cinco de Mayo Salad

If you're ready to celebrate Cinco de Mayo but are looking for healthier recipes, this Lucha Libre salad is ideal.
  • 8 oz Brown rice
  • 4 oz Black beans
  • 2 oz Cabbage
  • 1 oz Green Onion
  • 3.5 oz Sweet Potato
  • Two full chicken breasts
  • 1 avocado diced up
  • 4 oz tomato salsa (make your own by mixing: 4-5 tomatoes dices, 1/4 chopped cilanto and 1 onion finely chopped)
  • Lime crema (make your own by mixing: 16 oz reduced-fat sour cream, 1/4 cup fresh lime juice, 1/2 cup chopped cilantro, salt & pepper to taste)
  • Chipotle Lime Vinaigrette (make your own by mixing: 1/2 cup olive oil, 1/4 cup white sugar, 1/4 cup lime juice, 1/2 tsp ground cumin, 1/2 tsp ground chipotle pepper, 1/4 tsp garlic powder)
  • Tortilla chips
  1. Roast and dice the chicken breasts.

  2. In a serving bowl add rice and beans, vegetables and chicken.

  3. Layer avocados on top and garnish with tortilla chips.

  4. Add tomato salsa and drizzle with Chipotle Lime Vinaigrette and Lime Crema.

  5. Enjoy!
