If you're ready to celebrate Cinco de Mayo but are looking for healthier recipes, this Lucha Libre salad is ideal.
- 8 oz Brown rice
- 4 oz Black beans
- 2 oz Cabbage
- 1 oz Green Onion
- 3.5 oz Sweet Potato
- Two full chicken breasts
- 1 avocado diced up
- 4 oz tomato salsa (make your own by mixing: 4-5 tomatoes dices, 1/4 chopped cilanto and 1 onion finely chopped)
- Lime crema (make your own by mixing: 16 oz reduced-fat sour cream, 1/4 cup fresh lime juice, 1/2 cup chopped cilantro, salt & pepper to taste)
- Chipotle Lime Vinaigrette (make your own by mixing: 1/2 cup olive oil, 1/4 cup white sugar, 1/4 cup lime juice, 1/2 tsp ground cumin, 1/2 tsp ground chipotle pepper, 1/4 tsp garlic powder)
- Tortilla chips
Roast and dice the chicken breasts.
In a serving bowl add rice and beans, vegetables and chicken.
Layer avocados on top and garnish with tortilla chips.
Add tomato salsa and drizzle with Chipotle Lime Vinaigrette and Lime Crema.
