Mac and Double Cheese with Turkey

Use up the last of your turkey with this creamy one-pot dish that both you and the kids will love.

Makes 8 servings

Prep to table: 15 minutes
  • 4 cups water
  • 1 can (370 mL) evaporated skim milk, divided
  • 5 cups scoobi doo pasta
  • 1 3/4 cups grated cheddar cheese
  • 1 1/4 cups grated Asiago cheese
  • 2 cups chopped leftover turkey
  • 1 tsp cornstarch
  1. Bring water and 1 cup of evaporated milk to a boil in a large deep skillet. Add pasta and continue to cook on high (adjusting temperature if it starts splattering), stirring often for 10 minutes or until pasta is al dente.

  2. Stir in cheese and turkey. Whisk corn starch into remaining evaporated milk and add to skillet. Stir until smooth. Serve immediately.

Nutrients per serving 505 calories, 14 g fat, 422 mg calcium, 365 mg sodium, 59 g carbohydrates, 4 g fibre, 33 g protein. Excellent source of calcium, niacin and zinc. Good source of vitamin D, riboflavin, folate, magnesium and potassium.
