Mac & Cheese with French Toast Topping

The egg-soaked bread turns into tasty, cheesy croutons when baked and will make this dish a new family favourite. Eggs add omega 3s, but go for more by using pasta with added flax. Feeling like a meat-free meal? Skip the peameal and it's still super yummy.

Ingredients
  • 1/2 lbrotini or other pasta
  • 2 cups coarsely grated mozzarella (about 6 ounces)
  • 1 cup finely grated Parmesan cheese
  • 2 3/4 cups milk, divided
  • 2 large eggs
  • 3 thick slices bread, roughly diced
  • 2 tbsp unsalted butter, plus more for greasing
  • 3 tbsp flour
  • 1 tspsalt
  • 8 slices precooked peameal bacon, cut into thin strips
Directions
  1. Preheat the oven to 400-deg. F. Bring a large pot of salted water to a boil.

  2. Add the pasta and cook according to package instructions.

  3. While pasta is cooking, combine both cheeses in a bowl. In another bowl, whisk 1/4 cup milk and the eggs together; fold in the bread and add half of the cheese.

  4. Melt the butter in a bowl or large glass measuring cup in the microwave, about 60 seconds. Whisk in flour and 1 teaspoon salt. Whisk in remaining milk and microwave for 2 minutes or until thickened enough to coat the back of a spoon. This can also be done on the stove. It takes about 5 minutes in a saucepan over medium heat with frequent stirring.

  5. Stir in the remaining cheese, then pour sauce over the pasta and toss with bacon.

  6. Butter a shallow casserole dish (2.5L size). Add the pasta and top with the bread mixture.

  7. Bake until golden and bubbly, about 25 minutes. Let rest a few minutes before serving.
