Preheat the oven to 400-deg. F. Bring a large pot of salted water to a boil.
Add the pasta and cook according to package instructions.
While pasta is cooking, combine both cheeses in a bowl. In another bowl, whisk 1/4 cup milk and the eggs together; fold in the bread and add half of the cheese.
Melt the butter in a bowl or large glass measuring cup in the microwave, about 60 seconds. Whisk in flour and 1 teaspoon salt. Whisk in remaining milk and microwave for 2 minutes or until thickened enough to coat the back of a spoon. This can also be done on the stove. It takes about 5 minutes in a saucepan over medium heat with frequent stirring.
Stir in the remaining cheese, then pour sauce over the pasta and toss with bacon.
Butter a shallow casserole dish (2.5L size). Add the pasta and top with the bread mixture.
Bake until golden and bubbly, about 25 minutes. Let rest a few minutes before serving.
