Maple Beer Pork Shoulder

Maple coming together with pork has never sounded—or tasted—so good.

Ingredients
  • 1 duBreton Pork Shoulder Boneless Roast Échine de porc (rôti d'épaule)
  • 30 – 45 ml (2 – 3 tbsp.) of flour
  • 10 ml (2 tsp.) of steak seasoning
  • 3 bay leaves
  • 1 onion, sliced
  • 250 ml (1 cup) of dark or red beer
  • 80 ml (⅓ cup) of maple syrup
Directions
  1. Halve the pork shoulder lengthwise and then slice each half into 3 or 4 pieces.

  2. In a dish, mix the flour and seasoning.

  3. Coat the pork shoulder pieces in the flour mixture and place them in the slow cooker (sear the pork first if desired*).

  4. Mix the beer and maple syrup and pour over the meat. Add the onion.

  5. Cover and cook on high for 4 – 5 hours or on low for 6 – 7 hours (may vary depending on slow cooker). The pork is done when the meat is fork-tender.

  6. Remove the meat from the slow cooker and keep warm.

  7. Whisk the gravy until it is smooth.

  8. Serve the pork and gravy on a mash of potatoes and celeriac.

  9. FOR CONVENTIONAL OVEN, FOLLOW THE NEXT STEPS

  10. Preheat oven to 160°C (325°F).

  11. Halve the pork shoulder lengthwise and then slice each half into 3 or 4 pieces.

  12. In a dish, mix the flour and seasoning. Coat the pork shoulder pieces in the flour mixture.

  13. In an ovenproof pan, sear the coated pork shoulder pieces in oil or butter.

  14. Mix the beer and maple syrup and pour over the meat. Add the onion.

  15. Cover and bake for 3½ – 4 hours or until the meat is fork-tender.

  16. Remove the meat from the pan and keep warm.

  17. Whisk the gravy until it is smooth.

  18. Serve the pork and gravy on a mash of potatoes and celeriac.
