Each filling recipe will make 1 full batch of 12 pie pops. Choose the filling you want or make both, adjusting filling quantities accordingly.

1/4 cup maple syrup
2 tbsp unsalted butter
2 tbsp corn syrup
2 tsp cornstarch
pinch kosher salt
1 cup pecan pieces, lightly toasted, chopped
1/2 tsp pure vanilla extract
1. In a small saucepan set over medium-low heat, combine the first five ingredients and whisk until smooth. Raise heat to medium-high and cook until the mixture comes up to a lively bubble, whisking constantly until mixture thickens. Remove from heat; add pecan pieces and vanilla and stir. Transfer to a bowl and chill until needed.
