Mediterranean Chicken Pitas

MEAL TWO: This meal is super-quick, after putting aside some ingredients from MEAL ONE, Lemony Chicken Kebabs.

Filled with bright and filling flavours, these pitas are simple to make and a surefire hit once on the table. Opa!
Prep Time
5 minutes
  1. Cut 4 pitas in half; open up pockets.

  2. Spread insides with tzatziki.

  3. Remove reserved chicken from skewers; cut into slices.

  4. Fill pitas with chicken, dividing evenly; add baby spinach or salad greens, sliced cucumber and tomato and shredded carrot.

  5. Serve at once with pasta salad.
