Mexican Quinoa Salad

This delicious quinoa salad is packed with the flavors and colours of Mexico.

  • 1 Cup quinoa
  • 1 1/2 Cups water
  • 1 teaspoon butter or vegetable oil
  • 1/2 teaspoons cumin
  • 2 tomatoes, diced
  • 100 gram feta cheese, crumbled
  • 1/2 Cups cilantro, minced
  • 1/4 vildalia onion, minced
  • 4 green onions, chopped
  • 1 avocado, diced
  • 11/8 Cups olive oil
  • salt and pepper
  • juice of 3 key limes or one regular lime
  1. Rinse and drain quinoa three times to remove the natural coating that can make quinoa a bit bitter.

  2. In a medium saucepan, bring quinoa, water, salt, butter and cumin to a boil. Reduce to a simmer and cook for 15 minutes.

  3. Remove from heat and allow to stand covered for five minutes.

  4. Uncover, fluff with a fork and place in refrigerator, stirring every 10 or 15 minutes until cool.

  5. Mix remaining ingredients into cold quinoa and serve.
