Nacho-Crusted Tilapia

A mild white fish, tilapia is like a culinary blank canvas—just about any flavour goes well with it. For a Tex-Mex-inspired meal, serve this up with guacamole and salsa.

Prep to table time: 15 minutes
  • 1/2 cup crushed nacho tortilla chips
  • 1/4 cup ranch salad dressing
  • 1 1/4 lb tilapia filets
  1. Place oven rack at centre position; preheat oven to 425ºF.

  2. Place crushed tortilla chips in a wide, shallow bowl. Brush topside of tilapia with ranch dressing; press dressing-brushed side into crushed chips.

  3. Place fish on a baking sheet and bake in oven 8–10 minutes. Remove from oven and serve immediately.

160 calories, 8 g fat, 14 mg calcium, 160 mg sodium, 3 g carbohydrates, 0 g fibre, 19 g protein. Excellent source of vitamins B12 and D, niacin and selenium.
