Oat Bars with Pumpkin Seeds and Flax

Granola bars with the goodness of flax and pumpkin seeds...? Yes please!

Simple to make, delicious to eat—what more can you ask for in a bar?

Ingredients
  • 2 cups quick cooking oats
  • 1/2 cup brown sugar
  • 1/2 cup ground flax
  • 1 tsp cinnamon
  • 1 cup whole wheat flour
  • 1/2 cup pumpkin seeds
  • 1/2 cup dried cranberries
  • 1/2 tsp salt
  • 1/2 cup honey
  • 1 egg
  • 1/2 cup canola oil
Directions
  1. Preheat oven to 350-deg. F.

  2. Grease 9x13 baking pan.

  3. In large bowl, mix together quick cooking oats, brown sugar, ground flax, cinnamon, whole wheat flour, pumpkin seeds, cranberries and salt.

  4. In another bowl whisk together 1/2 cup honey, 1 egg and 1/2 cup canola oil.

  5. Pour wet ingredients over dry and mix well. Pat the mixture evenly into the pan. Bake for about 20 minutes or until lightly browned and set. Cool for 15 minutes, and then cut into 18 bars.
