Oatmeal Cranberry Flaxseed Cookies

These tasty and healthy cookies are a real favourite with the kids!

Simple, sweet and delicious...these are the perfect lunch box cookie, snack cookie or just give-them-a-cookie cookie.

  • 1/2 Cups canola oil
  • 1/4 Cups brown sugar
  • 1/2 Cups granulated sugar
  • 1 omega-3 egg
  • 1 teaspoon vanilla extract
  • 1/2 Cups all-purpose flour
  • 1/2 Cups flaxseed, ground
  • 1/2 teaspoons baking soda
  • 1/2 Cups dried cranberries
  • 1 1/2 Cup rolled oats
  1. Preheat oven to 350°F. In a bowl, thoroughly mix canola oil and sugars together. Add egg and vanilla, mixing well.

  2. Add flour, ground flaxseed and baking soda and mix until well combined. Stir in cranberries and rolled oats.

  3. Drop generous-sized tablespoons of the dough, 2 inches apart, on a parchment-lined baking sheet. Bake for 10-12 minutes.

Nutrients per cookie: 86 calories, 1 g protein, 4 g fat, 10 g carbohydrates, 1 g fibre, 0.5 g omega-3.
