Preheat oven to 350°F. In a bowl, thoroughly mix canola oil and sugars together. Add egg and vanilla, mixing well.
Add flour, ground flaxseed and baking soda and mix until well combined. Stir in cranberries and rolled oats.
Drop generous-sized tablespoons of the dough, 2 inches apart, on a parchment-lined baking sheet. Bake for 10-12 minutes.
Nutrients per cookie: 86 calories, 1 g protein, 4 g fat, 10 g carbohydrates, 1 g fibre, 0.5 g omega-3.
