Orange & Avocado Salsa

Serve this refreshing salsa with barbecued shrimp and lightly grilled flatbread.

Ingredients
  • 1/3 cup segmented oranges, diced (about 1 large navel orange)
  • 1/4 cup peeled and diced jicama
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup orange juice
  • 2 tablespoons diced red pepper
  • 2 tablespoons finely chopped red onion
  • 1 teaspoon grated lime zest
  • 1/2 teaspoon finely chopped habanero pepper, seeds removed
  • 1/2 teaspoons minced garlic
  • 1/2 teaspoons rice vinegar
  • 1/4 teaspoons kosher salt
  • 1 ripe avocado, diced
Directions
  1. Combine all ingredients except avocado in a medium-sized bowl and mix well.

  2. Add avocado, toss gently and serve.

Nutrients Per Serving

Nutrients per serving (2 tbsp): 49 calories, 4 g fat, 1 g protein, 4 g carbs, 2 g fibre. Nutrients per serving (with 4 large shrimp): 133 calories, 5 g fat, 19 g protein, 4 g carbs, 2 g fibre. Excellent source of vitamin B12.
