In a 2-cup glass measuring cup combine shallots, garlic, chili flakes and stock. Microwave for 3 minutes or until just boiling.
Set parchment paper in a shallow microwave-safe bowl and place nests in centre. Top with zucchini, tomatoes and olives, and carefully pour in hot stock. Gather paper's edges, making sure the package is sealed, and tie with string.
Microwave on high, about 8 minutes. Let rest 2 minutes before opening. Untie and garnish with chopped parsley and grated cheese. Season with salt and pepper to taste.
