"I like that this recipe called for zucchini because it's hard to get kids to eat it and it tasted good, but I did find it a little soupy." ~Mary Hietkamp, mom of Rebecca, 17, and David and Bruce, 13, Tillsonburg, ONT.

Prep: 5 minutes
On the table: 10 minutes
  • 1 tbsp thinly sliced shallots
  • 1 tsp minced garlic
  • Pinch chili pepper flakes
  • 1 1/4 cups chicken stock
  • 3 tagliatelle pasta nests
  • 1/2 cup julienned zucchini
  • 12 cherry tomatoes, halved
  • 7 oil-cured black olives, pitted and halved
  • Handful fresh flat leaf parsley
  • Parmesan, grated
  1. In a 2-cup glass measuring cup combine shallots, garlic, chili flakes and stock. Microwave for 3 minutes or until just boiling.

  2. Set parchment paper in a shallow microwave-safe bowl and place nests in centre. Top with zucchini, tomatoes and olives, and carefully pour in hot stock. Gather paper's edges, making sure the package is sealed, and tie with string.

  3. Microwave on high, about 8 minutes. Let rest 2 minutes before opening. Untie and garnish with chopped parsley and grated cheese. Season with salt and pepper to taste.
