Heat a large non-stick pan over medium heat. Add pancetta and cook for 1 minute each side. Set aside.
Brush haloumi with olive oil and cook 1-2 minutes each side or until golden. Set aside.
Brush steaks with olive oil, season with sea salt and black pepper and cook 1-2 minutes each side or until desired doneness.
In a bowl, stir 1/2 cup arugula and mayonnaise together until combined.
To assemble, spread mayonnaise mixture onto bread and top with steak, pancetta, haloumi, tomatoes and remaining arugula.
