Pepper Steak Sandwich

This piled-high sandwich is a meat and cheese-lover's dream.

  • 8 slices pancetta
  • 8 ounces haloumi cheese, sliced
  • 1 pound minute steaks
  • 1 1/2 Cups arugula
  • 1/2 Cups mayonnaise
  • 1 sourdough baguette, quartered and halved lengthwise
  • 2 tomatoes, sliced
  1. Heat a large non-stick pan over medium heat. Add pancetta and cook for 1 minute each side. Set aside.

  2. Brush haloumi with olive oil and cook 1-2 minutes each side or until golden. Set aside.

  3. Brush steaks with olive oil, season with sea salt and black pepper and cook 1-2 minutes each side or until desired doneness.

  4. In a bowl, stir 1/2 cup arugula and mayonnaise together until combined.

  5. To assemble, spread mayonnaise mixture onto bread and top with steak, pancetta, haloumi, tomatoes and remaining arugula.
