Personal Grilled Peach Crisps

Peaches take wonderfully to the grill. Their sugars caramelize with a hint of smokiness and add a delightful element to these individual peach crisps.

Chef’s Tip: For a quick crumb mixture, use a box grater and a whole piece of very cold butter to grate butter into bowl with flour mixture. Rub with fingers until blended into flour mixture and it resembles large crumbs. Note:If you can’t find large peaches, 6 smaller peaches can be substituted. You will need 12 sheets of aluminum foil and divide the crumb mixture accordingly.

  • 1/4 cup all-purpose flour
  • 2 tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup unsalted butter, diced and chilled
  • 1/4 cup chopped pecans (almonds can be substituted)
  • 1/4 cup granola or quick cook oats
  • 3 large, firm, ripe peaches, halved and pitted
  • 6 sheets aluminum foil, about 8x-8 inches each
  • vanilla ice cream or frozen yogurt, if desired
  1. Preheat grill to high.

  2. In a bowl, combine flour, brown sugar and cinnamon and stir well. Rub 3 tablespoons butter into flour mixture until it is incorporated and large crumbs appear. Add pecans and granola and stir well.

  3. Peaches can be scooped with a melon baller to make a deeper hole if they are too shallow once the pit is removed. Melt remaining butter and brush on cut sides of peaches. Place peaches cut-side down on grill and cook, rotating once until softened with grill marks, about 4 to 5 minutes. Remove from grill and place each peach half, cut-side up, in the centre of an aluminum foil square. Divide flour mixture into 6 and spoon in the centre of each peach and wrap tightly. Return to grill, cut-side up, and cook until softened and bubbling, about 12 to15 minutes.

  4. Serve peach halves in shallow bowls with a scoop of vanilla ice cream or frozen yogurt.
