Preheat oven to 400ºF.
Toss together potato, onions and cheese in a bowl.
Heat 1 tablespoon oil in a cast iron skillet over medium-high heat. When oil is shimmering, pour in potato mixture, pressing into skillet. Fry for 5 minutes. Check bottom of rosti; when it is golden, flip onto a plate and then carefully slide back into skillet. Transfer skillet to oven and bake for 15 minutes or until crispy and brown. Remove rosti from oven, cut into wedges and serve.
