Shaved Brussels Sprouts with Toasted Almond Slivers

This recipe is sure to make even a die-hard Brussels sprouts detractor a convert. If slicing Brussels sprouts seems like too much work, put the trimmed sprouts down the feed tube of a food processor fitted with a slicing blade.

"I hated Brussels sprouts as a kid, but I am now a reformed Brussels sprouts eater! The crunch of the toasted almonds was a great addition." Andrea Tomkins, mom of Emma, 11, and Sarah, 9, Ottawa.
Prep Time
20 minutes (to table)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 lbs Brussels sprouts, trimmed and sliced (about 8 cups)
  • 1 tbsp sodium-reduced soy sauce
  • 4 tbsp toasted slivered almonds, divided
  1. Melt butter with olive oil in a large saucepan over medium-high heat. Add Brussels sprouts and sauté until almost tender, about 8 minutes.

  2. Stir in soy sauce and 3 tablespoons almonds. Season with pepper, if desired. Transfer to bowl. Sprinkle with remaining almonds and serve.

Nutrients Per Serving

59 calories, 7 g fat, 58 mg calcium, 95 mg sodium, 11 g carbohydrates, 5 g fibre, 5 g protein. Excellent source of vitamin C, folate and vitamin K. Good source of vitamin E, vitamin A, manganese and potassium.
