Brown bagging it? Avoid a “soggy” bao by packing 1 cup bao mixture in an insulated food container and sending the baguette and mango separately for easy assembly at lunch.
Makes 4 sandwiches
- 1 teaspoon canola oil
- 2 chopped shallots
- 1 tablespoon minced lemongrass
- 1 teaspoon minced garlic
- ¼ cup red curry paste
- 340-gram package of ground soy
- 1 cup ketchup
- 2 tablespoons Dijon mustard
- 4 buns or 10-centimetre pieces of baguette
- Mango, sliced
Place canola oil, shallots, lemongrass, garlic and red curry paste in a glass bowl and microwave 60 seconds or until fragrant and shallots are translucent.
Stir in package of ground soy, ketchup and Dijon mustard; microwave for 3 minutes or until warm.
Serve on a split bun or baguette and top each with a handful of mango slices.
