Brown bagging it? Avoid a “soggy” bao by packing 1 cup bao mixture in an insulated food container and sending the baguette and mango separately for easy assembly at lunch.
Makes 4 sandwiches
  • 1 teaspoon canola oil
  • 2 chopped shallots
  • 1 tablespoon minced lemongrass
  • 1 teaspoon minced garlic
  • ¼ cup red curry paste
  • 340-gram package of ground soy
  • 1 cup ketchup
  • 2 tablespoons Dijon mustard
  • 4 buns or 10-centimetre pieces of baguette
  • Mango, sliced
  1. Place canola oil, shallots, lemongrass, garlic and red curry paste in a glass bowl and microwave 60 seconds or until fragrant and shallots are translucent.

  2. Stir in package of ground soy, ketchup and Dijon mustard; microwave for 3 minutes or until warm.

  3. Serve on a split bun or baguette and top each with a handful of mango slices.
