Steamed Corn on the Cob

This corn is dressed to impress!

*Quick Herb Butter: Take 1 pound of unsalted butter and soften to room temperature. Mix 4 tablespoons of pesto into butter. Shape butter in wax paper into 2-inch thick log. Refrigerate and keep on hand for flavouring corn, or for topping grilled steaks, fish and vegetables.

  • Whole ears of corn
  • Herb Butter*
  • Coarse salt
  • Fresh-cracked black pepper
  1. To create a stunning visual effect, as well as a nifty holder for the cob, pull the outer husks of each cob back, leaving them attached, and tie with butcher's twine. Then, cut off thepointed end of each cob.

  2. Using a tall pot, lay in a steamer basket and fill with 3 inches of water.

  3. Bring water to a boil.

  4. Stand cobs in pot, cut-end down.

  5. Cover with aluminum foil and steam for 8 minutes.

  6. Serve hot with Herb Butter*, salt and pepper.
