Summer Turkey Sausage Pasta

This simple and light dish makes the perfect casual summer-time meal

  • ½ cup pine nuts
  • 4 green onions
  • 2 red peppers
  • 2 tablespoons sesame seeds
  • 4 cooked turkey sausages
  • 2 cups whole wheat pasta noodles (fusilli)
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  1. Add pine nuts, raw green onions and sesame seeds in a bowl.

  2. Add olive oil and balsamic vinegar and toss, let sit while cooking the turkey sausages in a non-stick fry pan on medium to low heat.

  3. Cook pasta. Once the sausages are cooked cut them into slices and add to the pine nut and onion mixture.

  4. Drain the fat from the fry pan and toss in the chopped red pepper for 3 minutes just to sear them.

  5. Add the peppers and pasta to the rest of the ingredients.

  6. Stir until completely mixed and enjoy.

Based on 2 servings: 771 calories, 45 g fat, 24 g protein, 10 g fiber, 75 g carbohydrates, 15 mg cholesterol, 340 mg sodium. Excellent source of vitamin A, vitamin E, vitamin C, magnesium, zinc. Good source of thiamine, folate, vitamin B6, iron.
