Ingredients
  • 1 cup uncooked long grain white rice
  • 3/4 cup lite coconut milk
  • 3/4 cup pineapple juice
  • 2 teaspoons Thai red curry paste
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon ground ginger
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • unsweetened toasted coconut (like Dang® coconut chips)
  • cilantro, chopped
  • cashews, salted and roasted
  • limes, cut into wedges
Directions
  1. To the pressure cooker pot, add rice, coconut milk, pineapple juice, curry paste, onion powder, garlic powder, ground ginger, salt, and pepper; stir to combine. Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 3 minutes. When cooking is complete, use a natural release for 10 minutes and then release any remaining pressure. Stir well.

  2. Garnish individual servings with a sprinkle of coconut flakes, cilantro, cashews, and a squeeze of lime.
