Thin-Crust Tortilla Pizza

Whip up this simple recipe using tortillas, and add any favourite vegetables from your fridge

  • 2 10-inch whole wheat tortillas
  • 1½ cups grated mozzarella cheese
  • ⅓ cups tomato sauce
  • Pizza toppings (mushrooms, pepperoni, peppers, goat cheese, etc.)
  1. Preheat oven to 375°F.

  2. Place a tortilla on a parchment paper-lined baking sheet. Evenly top with half the cheese. Top with second tortilla.

  3. Spread tomato sauce overtop. Sprinkle with remaining cheese and desired pizza toppings.

  4. Bake for 10 minutes. Let rest for 1 to 2 minutes before cutting into wedges.

Based on 2 servings and including crust, cheese and tomato sauce only: 269 calories, 3 g fat, 31 g protein, 4 g fiber, 27 g carbohydrates. Excellent source of calcium, zinc, vitamin B12.
