Recipe excerpted from Everyone Can Cook Midweek Meals by Eric Akis
Preheat oven to 375°F.
Place a tortilla on a parchment paper-lined baking sheet. Evenly top with half the cheese. Top with second tortilla.
Spread tomato sauce overtop. Sprinkle with remaining cheese and desired pizza toppings.
Bake for 10 minutes. Let rest for 1 to 2 minutes before cutting into wedges.
Based on 2 servings and including crust, cheese and tomato sauce only: 269 calories, 3 g fat, 31 g protein, 4 g fiber, 27 g carbohydrates. Excellent source of calcium, zinc, vitamin B12.
